Benedict Sarpolio
Operations & Facilities Manager
Born and raised in San Jose, Benedict “Benny” Sarpolio has spent the past 16 years working his way through the hospitality industry. He got his start at Starbucks in 2010 before moving to a local wine bar, where he traded the high-volume morning rush for a more guest-focused environment centered around hospitality and connection.
Benny later transitioned into the world of craft cocktails, starting as a barback in Downtown San Jose and eventually working his way up to bartender — a path that ultimately introduced him to the same people he proudly works alongside today.
Since joining M.O. Hospitality in 2021, Benny has become a reliable and steady presence across the group’s venues, known for his hands-on approach and attention to the details that keep operations running smoothly day in and day out. Now serving as M.O. Hospitality’s Operations & Facilities Manager, he plays a key role in supporting both the team and the guest experience behind the scenes.
